Lee Murdoch has been appointed executive chef at Seaton House in St Andrews.
He succeeds Mark Drummond, who served as culinary director at Hyatt’s Schloss Roxburghe and held the executive chef role at Seaton House since December last year.
Murdoch will collaborate with Roy Brett, the chef founder of the Ondine Oyster & Grill restaurant and head of culinary for the UK and Europe at Valor Hospitality, which operates the 42-bedroom Seaton House.
Murdoch will lead the hotel’s food and beverage services, which include:
